Book Review: Craft Cocktails at Home

How much is a "dash" of bitters? What can I do to turn my tap water into "Magical Alpine Fairy-Water?" A cream whipper is just for making whipped cream, right? These are just a few of the questions that are answered in Craft Cocktails at Home by Kevin Liu. 

I originally picked up this book to answer that very first question above. I was trying to test out various bitters to see which I preferred. I do that. Head-to-head testing seems to be my favorite way to find these things out. But in order for the experiment to make sense, I needed to be consistent in my measures. A quick Google search led me to the Amazon listing forCraft Cocktails at Home. Before I knew it, it was ordered and on its way.

I figured if it could answer that one simple question, there were probably quite a few more that it could answer as well. And though I will probably never find myself making cranberry bubbles to put on top of a cocktail, the fact that I now have a reference as to how to go about doing it fills me with joy.

But the book doesn't just cover how to make drinks to impress your friends. It also covers topics that might make it less likely for you to kill them as well. Things such as shelf-life and preservation. There are also entire sections dedicated to filtering, carbonating, foaming, smoking and, yes, even something as "basic" as building a balanced drink.

I would say that the section on the science of flavor is probably my favorite. Or maybe it's the hacking together useful gadgets sections. Or maybe the part on bitters…

To say that I enjoyed this book is an understatement. It hit the geeky science side of my personality perfectly and followed it up with some fun DIY hacking. And all in the service of making a fun cocktail. What's not to love?

James E. Pepper 1776 Straight Rye Whiskey

Last November, when I was in Kentucky, I was looking for something I couldn’t get at home. I stood in the whiskey aisle of Liquor Barn trying to find something that was both normally unavailable to me and affordable. I looked for a while. A long while. My wife was in a hurry to get to the hotel. I wasn’t making her happy with my dawdling.

It didn’t take too much longer for me to finally grab something that I’d heard of, but hadn't had. That something was James E. Pepper 1776 Rye. I’d remembered that I’d heard something about it. Problem was, that I didn’t remember what I’d heard. I thought I remembered something positive. At the very least, I seemed to remember that I hadn’t heard anything bad. 

It turns out I had heard the good things about the 15 year version of the James E. Pepper line. And this was not that. In fact, after I got home, I realized that it claimed to have 95% Rye. So…MGPi. But I tend to like that flavor profile. And it was 100 proof and under $30 so I wasn’t too upset with the pickup.

James E. Pepper 1776 Straight Rye Whiskey

Nose: Pine forest and mint. Hints of cherry fruitiness, citrus and tobacco.

Mouth: Thick and oily. Mint. Soap. More cherry hints. Lots of pine and pickle juice.

Finish: More pickle. Warmth that lasts. Mint that lasts even longer.

Thoughts: I thought the nose was the most interesting part of this one. It’s very nice. I Iiked the whiskey neat, my wife didn’t. Though I will admit, it is a bit one-note. But it made a good Sazerac (which is my go to rye cocktail). In the end, this is basically a higher proof version of Bulleit Rye. It’s a bit sweeter. The flavors are a little bit muddier. If you like that flavor profile and this is sold near you, pick it up (if you don’t like that flavor profile, I’d advise you to skip it). It's a pleasant enough whiskey, but what I really like about it is that the bottler isn’t charging an arm and a leg for something they didn’t produce. MGPi juice gets a poor reputation, not because it is bad, but because people keep trying to pass it off as their own “craft” and charging small producer prices for it. In this case, it’s about the same price as the most widely distributed MGPi (Bulleit) and it’s a higher proof. So that’s a win.

Book Review: Founding Spirits—George Washington and the Beginnings of the American Whiskey Industry

In February, my wife and I made a trip to Virginia to meet some friends, spend some time sightseeing with my uncle and generally check out if I liked the state. One of the sights we saw was George Washington’s home at Mt. Vernon. If you are into early US history, you should check it out. I was there at open and stayed long enough to have a late lunch. In fact for spirits fans if you go in the summer, you can visit the recreation of George Washington’s distillery. If you go in winter, like I did, you can pick up the book about it. Like I did.

Founding Spirits: George Washington and the Beginnings of the American Whiskey Industry

Author: Dennis J. Pogue

This book is a nice overview of the history of the American whiskey industry as seen through the lens of George Washington. As the subtitle states, the book starts with George Washington, giving an overview of his life before, during and after his Presidency. 

In the first part of the book, the author examines Washington’s relationship with “spiritous liquors.” He shows us how Washington, as was the custom at the time, bought votes by supplying alcohol to the voters. How he diligently practiced the customs of hospitality and made sure his guests had something to drink even leaving instructions on what to serve while he was away being President. The book even details Washington’s complicated views on alcohol by telling us how Washington believed in both the “healthsome” benefits of alcohol and recognized the dangers of continual overindulgence. And, of course, the book discusses both the fact that Washington led troops against whiskey distillers who didn’t want to pay their taxes and then opened up one of the largest whiskey distilleries in the early days of the country. Rightly showing that there was no hypocrisy there.

The second part of the book details the business of running Mt. Vernon. Which, to me was made much more interesting by having just visited before reading the book. This portion describes the many ventures that Washington tried to make his lovely plantation profitable, fishing, planting, dairy cattle, milling and, yes, the production of whiskey, rum and brandy. It also talks about Washington’s views on the evils of slavery. It’s a sad thing to say, that in this case, the economics of running a profitable business overcame the fact that he seemed to hate even the idea of slavery. He did eventually free his slaves, but in his will and only after his wife had also died. There is also a brief chapter describing the distillery itself. This includes both historical records and archeological information that the author uncovered while digging at the distillery site.

The third part of the book is the topic of the second part of the subtitle. It is an overview of the history of the whiskey industry from the death of Washington, through Temperance, Prohibition and Repeal, then up to the modern day. It’s mostly things you may have read before if you’ve read books on the subject, but there are a few tidbits in there as well.

The book finishes with the story of how the modern rebuilding of the distillery at Mt. Vernon, and it’s whiskey, came to be. Overall, I found the book to be well written and very interesting. It had just the right amount of detail for me. Digging deep for the parts that needed it and speeding past those that didn’t. I liked it a lot and recommend it to fans of American history and the history of American spirits.

A Review of Four Roses Limited Edition Small Batch 2013 Release

It’s no secret that I love Four Roses. And this, my friends, is getting to be a problem. Everyone loves Four Roses now. They love it so much that you can barely buy one of their limited releases anymore. This year, my normal source for the Limited Small Batch release pulled it off the shelves and into a lottery. A lottery that had a suspicious number of couples winning for the number of people at the drawing. Not coincidentally, a lottery in a store that is no longer one of my top visits when looking for good bourbon.

Other than that, I never saw it in Minnesota. In fact, never saw it on a shelf. Period. Popularity is a bitch for those of us who’ve loved it all along. But I’m not one of those hipsters who loved something until it got cool and then moved along. Because Four Roses really is that good. And luckily I have friends. Friends who are willing to pick me up a bottle where they live and get it to me. Friends that I now owe a drink to the next time we are in the same state. 

Once I got my bottle of Four Roses Limited Small Batch 125th Anniversary Edition, I rationed it. I rationed it for the last few months. And now it’s finally down to one more pour. So. What did I think of it?

Four Roses Limited Edition Small Batch 2013 Release

Purchasing Info: $99, unnamed Las Vegas store.

Particulars: 51.6% ABV, Recipe: OBSV 18 year + OBSK 13 year + OESK 13 year

Nose: Black Tea with honey. Cedar. After a bit it gives up some baking spices and a hint of citrus.

Mouth: Thick, spicy and sweet with clove, maple and hints of pear.

Finish: Warm and sweet leaving a bright tingly sensation on the tongue and cheeks.

Thoughts: First off, I really, really like this bourbon. I’ve heard people describe it as the best bourbon they’ve ever had, but that’s probably pushing it a bit. I’ll go ahead and say that, for me, it’s not even the best Four Roses I’ve had. I would rank both the 2012 Limited Small Batch and the the 2009 Mariage higher (which were basically equally good in my book). 2013 was a bit too thick and sweet and the flavors a bit more muddied when compared to the 2012. But that’s splitting hairs. I can see why this was chosen to be the American Whiskey of the Year last year, it’s an amazing whiskey. It’s just not the best ever.

I am already looking forward to 2014’s version. I hear that the barrels that went into making both it and the 2012 have been exhausted so I’m excited to see if they try something new and venture away from the OBSV/OBSK/OESK formula they’ve used the past couple years. I’m really kinda hoping for something with the OESF. Or maybe something with a Q yeast. Something that’ll throw people for a loop. But we’ll see.

New Retailer: Ace Spirits in Hopkins, MN

A couple of weeks ago, a twitter follower brought Ace Spirits to my attention, wondering if I had heard about the store. I hadn't, so I looked online to see what it might be. Right on the front page:  “every whiskey available in the state.” Color me intrigued.

Since that time, I’ve been to Ace a couple of times. It’s not hard to find, but if you don’t know what you’re looking for, you might drive past it, never noticing it’s there. On my first visit, I wondered if I was in the correct spot or if my phone had led me astray. I was in the parking lot of a small strip mall and there was no sign that said “Ace Spirits be here.” There was a large sign above one of the doors that simply said: “BEER & WHISKEY, “ which was enough for me to decide that even if I wasn’t in the correct place, it was the place I really wanted to be anyway. As I walked up to the store, I wondered if it was open. Unlike most of the liquor stores in the area, there was a definite lack of light spilling out. But above the slightly mirrored door, there was a small sign that said something about cold beer. And it was lit, so I wandered in. 

I was immediately welcomed upon entering. Which was a nice change from many of the stores I visit. It was dark, but comfortably so. It’s a small area, but not crowded. The shelves were dark wood and two walls were covered floor to ceiling with whiskey bottles. If you put my computer desk and a small tv in there, it would be exactly how I imagine my man-cave to be. 

To learn more, I reached out to Louis Dachis, proprietor of Ace Spirits. He was gracious enough to answer a few questions.

So what's the Ace Spirits story?

Ace Spirits has been an idea percolating for a few years. I had been getting very interested in beer and whiskey of all types and I found what were once wine trips were turning into brewery and distillery tours. I had been operating three Merwin Liquors stores in the cities and the amount of space dedicated to beer and whiskey was expanding as I got more and more into it and the customers responded to the increasing selection. My gal, Sara and I visited the Whiskey Shop in Brooklyn and we really loved the idea of a small and focused space. Craft beer was already exploding and we were watching dedicated whiskey bars open in the cities and menus at existing places expand to include more whiskey and better beer. 

The idea was to create an experience surrounding the purchase. A place to talk about these things we love in a comfortable space. The entire setup was to be very intentional from layout, stocking, fixtures and lighting. It would have been easy to buy Lazier shelving and slap some paper signs over the windows, but that's not what we were going after. We've blocked all sunlight from the outside with walls and window film to prevent skunking. All lights in the store, with the exception of the three above the register are narrow-band LED's and we keep the temps in the store on the chilly side to aid with the freshness goal. The build out still isn't done and we will probably always consider it a work in progress.

Your website claims to carry every whiskey available in Minnesota. And since I saw things that I haven't found elsewhere, I believe you. But why? And why do you think the competitors aren't?

Why not? It's our focus. We love the stuff. And it's funny, you can have just as long and passionate discussion with someone about the merits of Old Overholt as you can about Balvenie 40. There's a lot to be said for that. We all like different stuff and it's very true that certain items lend themselves best to certain experiences. I really enjoy it all and love to hear from the people that produce it as well as those that love to drink it. Others don't do it because there are a lot that don't sell. It's that simple. But it's sort of like being open 24 hours- you don't stay open because you do a ton of business between the hours of 3 and 4am, you do it because everyone knows that no matter when they swing by, you will be there. This is a similar concept. If you love whiskey, you know we will have it.

After visiting the website, it's not hard to see that you are doing things a little differently than most stores. Many local whiskey fans have been involved in drawings to win a chance to purchase rare spirits. Your contest is just to win the whiskeys. Free. 

I like the word "Free". It gets people's attention. Especially when it comes to these items. I wanted to let people know who we are and what we were all about. It's not much more complex than that.

Not that I'm complaining since you are basically on my way home from work, but why Hopkins? Why not Minneapolis or St. Paul?

I would love to have opened in Minneapolis, but state law prevents me from having more than one license in any given municipality. I grew up in Hopkins and love the Western Suburbs. Four Firkins covers the edge of the city, but there wasn't anything out this way. Being as close as it is to Highway 7, 494, and the new thoroughfare that Shady Oak is to become for EP, I thought this was a great spot. The bones of the space were good and because this is to be a destination, the location wasn't quite as critical. There was a store a block away that closed recently which allowed us to move in. This store did OK, and I'm hoping the neighborhood welcomes us and affords us similar success in addition to those that may come to visit from further away. So far, the response has been very encouraging.

Bottom Shelf Bourbon Brackets: The Championship Rounds

It’s here, Championship Monday. We’ve made it through the opening rounds and tonight we find out who graduates to the Fancy Shelf. 

At the beginning of this tournament, if you had asked me if I would have found a gem in the field, I would have guessed yes. I mean, that was kind of the point of the exercise. But, I have to say that I was pleasantly surprised that out of the entire field, there was only one bourbon that I wouldn’t want to drink again. Some were certainly mediocre, but only one was downright bad. Heck, many of them I’d be happy with neat, or with an icecube or two. 

In the interest of not being influenced by my memories of the product from the opening rounds, I did the next two rounds using my typical double-blind format where I poured into glasses 1 and 2 and my wife moved them to spots A and B. I knew what bourbon was which number and my wife knew which number coresponded to which letter, but neither of us knew which bourbon coresponded to which letter. These were not formal tasting notes, just impressions to let us decide which one we liked better.

Round 2: Down to Four

Division 1: Old Charter 8 year vs Ezra Brooks

Nose A: Trends more vegetal or medicinal/chemical

Nose B: Caramel covered fruit

Mouth A: spicier and warmer, but still more vegetal

Mouth B: gentle, sweet and floral

Finish A: Nice, but unremarkable

Finish B: Perfumy and slightly offputting

Thoughts: A’s vegetalness made it less enjoyable head to head. Whereas B’s gentleness made it feel more watery in comparison. That said, I enjoyed both of these on their own during the past two weeks. 

Winner: B, but only just. The main thing it was missing was kick so it’s no surprise that B was the lower proof Old Charter 8 year old.

Division 2: Old Crow Reserve vs JW Dant Bottled in Bond

Nose A: A slightly medicinal Juicyfruit gum

Nose B: Fruitier, but with hints of cinnamon. Also more caramel sweetness

Mouth A: lots of caramel here

Mouth B: sharp, medicinal

Finish A: hot, but in a good way

Finish B: warm bitterness

Thoughts: B has a much nicer nose. More complex and it makes me anticipate a tasty dram. The problem is that once it get’s in the mouth it falls apart. It goes sharp and medicinal when compared with A. Classic overpromise, underdeliver. 

Winner: A wins this hands down. Honestly, it wasn’t even close after the nose. I was surprised Old Crow Reserve didn’t put up more of a fight after all the people I talk to that are enjoying it, but the clear winner is JW Dant Bottled in Bond.

Fancy Shelf Championship

Old Charter 8 year vs JW Dant Bottled in Bond

Nose A: Typical bourbonness, caramel sweetness with some spice

Nose B: A bit more burn. Almost chocolate chip cookie.

Mouth A: very sweet with just a hint of sharpness

Mouth B: Warm and not very sweet, kinda sharp

Finish A: gentle and sweet

Finish B: wow! great finish. Nice warmth that lasts.

Thoughts: This was a very close one. My wife and I both enjoyed each of these a lot. In fact, it was so close that we each picked a different winner. I chose B on the strength of it’s finish. My wife chose A. 

Winner: That said, it’s my blog so the Fancy Shelf Champion is: B, JW Dant Bottled in Bond.

It’s crazy to me that three of the top four are bourbons that I would be perfectly happy pouring for myself neat or with a bit of ice. Two weeks ago, my wife drove to New Orleans to visit a friend, I liked the Old Charter 8 year enough to have her grab me a handle of it on her way back since they don’t sell it in Minnesota. I do wish it had a little more proof and so I hope to check out the NAS Charter 101 next time I travel to a state it’s sold in. Ezra Brooks is nice for those days I want a little spicy kick, but don’t feel like having anything special. Card-playing bourbon I like to call that. Dant Bonded isn’t quite as good as it’s higher priced brother Evan Williams Bonded, but it’s almost there and it’s well under $20 per liter here in MN where EW is a little over that at my normal shop. Old Crow got a lucky draw in the first round. I’d put off deciding how I felt about it, but can say now that it’s mediocre at best. I’ll use it for mixing or cooking and be pleased with the purchase.

JW Dant Bottled in Bond vs. Ancient Age, Bottom Shelf Bourbon Brackets, Round 1

Round 1c of the Bottom Shelf Bourbon Brackets features Division 2, Number 1 seed JW Dant Bottled in Bond versus Number 4 seed Ancient Age. 

JW Dant Bottled in Bond. A bourbon that I’d looked past quite a bit. It’s not available at my usual store and it’s kind of tucked off to the side at my…well…other usual store. I knew ahead of time that it was Heaven Hill since I had seen some Dant labels on one of the tours I took there. I knew it was 100 proof and at least four years old because it’s bonded. Other than that though, I didn’t know much about this one before trying it. It is the highest proof bourbon in the competition and, as such, is the number 1 seed in Division 2.

Ancient Age is the one bourbon in the competition that I’ve had previously. I used to keep a bottle in the house as an “I don’t want to think about it” bourbon. It was the first bourbon to show me that cheap does not equal bad. It’s also one that I’d give to people who were interested in bourbon, but who were not aficionados. Not because they wouldn’t notice, but because most often they liked it better. It’s gentle and sweet. Being the youngest bourbon in the competition with a stated age of 3 years, it was the last selected and is the number four seed of Division 2.

JW Dant Bottled in Bond

Purchase Info: Blue Max, Burnsville, MN $14.99 for a 1L

Stated Age: NAS

ABV: 50%

Produced by: Heaven Hill

Nose: Very complex. This started off very vegetal. After is settles a bit: dark, ripe plums and cinnamon. After a further 20-30 minutes it transitioned again to a perfumy sweetness.

Mouth: Spicy, right on the tongue tip followed by brown sugar sweetness and a very slight vegetal sharpness. 

Finish: Sweet with only a slight burn. Transitions to a mouth-drying bitterness that makes you want another sip. Occasionally you’ll be visited by a floral perfuminess.

Thoughts: In the ranks of Heaven Hill Bottled in Bond bourbons that I’ve reviewed, this ranks  between the Evan Williams and the Old Heaven Hill. Much better than the Old Heaven Hill and slightly worse than the Evan Williams. 

Ancient Age

Purchase Info: Haskell’s Wine & Spirits, Burnsville, MN $11.99 for a 1L

Stated Age: 36 months 

ABV: 40%

Produced by: Buffalo Trace

Nose: Heavy dose of silage at first. Buried under it are cherry, mint and honey. 

Mouth: Thin and sweet with silage/grain flavors dominating.

Finish: Gentle cinnamon candy transitioning to a citrus pith style bitterness.

Thoughts: This is not complicated. This is thin. This is certainly not one you want if you are going to have another within a timeframe where you can compare them. But in spite of all of that, I tend to like the cinnamon sweetness and the gentleness of the finish. Which is unusual since I normally prefer a strong finish. If you do not like a gentle bourbon, this won't be for you.

Winner: There is no surprise here. JW Dant, the higher seed, moves ahead. Ancient Age is an ok “only bourbon of the night,” but it can’t handle being compared to anything. JW Dant Bottled in Bond might be one I could see having on the shelf as a decent, everyday bourbon. I look forward to seeing how it does in the next round.

Ezra Brooks vs. Old Fitzgerald Prime, Round 1 Bottom Shelf Bourbon Brackets

Round 1b of the Bottom Shelf Bourbon Brackets features Number 2 seed Ezra Brooks versus Number 3 seed Old Fitzgerald Prime. 

I’ll be honest. Ezra Brooks is one of those bourbons, that I walked past for years, never intending to purchase it. It was down low enough on the shelf that I assumed, rightly or wrongly, that it wasn’t worth my time. Which I find odd, upon reflection, since I’m cheap enough that you would think that the price alone would have drawn my eye. But I hadn’t seen it come up online in blogs, forums or twitter. It was easily overlooked. Upon looking online, I see that this is a sourced bourbon sold by Luxco out of St. Louis, sellers of fine spirits such as Everclear and various mixers, schnapps and many many other categories of liquors. It’s described as being for those with rugged spirit and a taste for adventure. Woah. Do I have rugged spirit. Boy I kinda hope so. 

Old Fitzgerald Prime is an old name with a strong heritage. It’s an 80 proof wheated bourbon produced by Heaven Hill. I’ve read a lot about the brand, the history, how the brand is the ancestor of Pappy from back when it was Stitzel Weller, and how it inspired Larceny now that it is Heaven Hill. I’ve even reviewed, and liked, it’s 12 year old and it’s Bottled in Bond siblings. Old Fitzgerald Prime was an instant fit for this tasting, I knew I liked the flavor profile, but how would the lower proof stack up?

Ezra Brooks

ABV: 45%

Sourced/Sold by: Luxco

Nose: Big hit of caramel right off the bat. Under that is some apple.

Mouth: A lot of spice at first, honey, sawdust and hints of apple.

Finish: Warm finish that settles in your chest. Lingering spiced honey.

Thoughts: This one is a classic value play. It’s good considering it’s well under $20 per liter, if it were $30 I don’t know that I would buy it.

Old Fitzgerald Prime

Stated Age: NAS 

ABV: 40%

Produced by: Heaven Hill

Nose: Cherry, sawdust, alcohol. A noticeable lack of sweetness. 

Mouth: Sweet. Brown sugar and grain flavor. Not complicated, but pleasant.

Finish: Gentle, with a lingering bitterness.

Thoughts: This is a tv watching bourbon. It’s something to sip that tastes good for when you don’t want to concentrate on, or think too hard about your bourbon. It wouldn’t be my first choice for a pour, but I’d be happy enough to have it brought to me. I like this almost as much as I remember liking the BiB version. Still got some alcohol on the nose, which was surprising given it’s lack of proof. But, still, sweet and tasty.

Winner: Ezra Brooks wins by a hair, mostly on the strength of it’s finish. In this case spiced honey beats a lingering bitterness. But it was very, very close, I’d be happy to have either of these on my shelf as a decent everyday bourbon. Old Fitzgerald, being a wheater was softer and sweeter and might be seen as having a disadvantage in this matchup. But then again, Pepsi won the “Pepsi Challenge” back in the 80s mostly on the strength of people choosing the sweeter one head to head, so who knows. In this case, I preferred the rugged spice to the sweeter wheat. But both were good.
